You want to learn how to make money from trade and produtcion, how to earn more then you spend, how many and which troops to hire so you have good army but still manage to pay for them, which buildings to build, when to gather cash up for something good and when to get loans to buy something you must have now, how to manage corruption, stability and inflation, which advisors to hire. You will probably lose quite a lot of battles first, that is fine, look how to AI moves, learn the terrain and quality of generals. Once in the war you want to learn how to raise troops, which troops to use, how to move them both on the land and over water, how to attach generals, how to siege forts, where the forts block your movement, how to predict where AI moves, when to engage in the battle, how to raise warscore and propose peace deal. It is likely you will fail first, simply try again. Try to conquer some land and win some wars. All the DLC just make base game more complex and add extra layers for those players who have played it already for 4 years and know everything. Yes, there are lots of mechanics in the game, specially when you have unlocked every single DLC. Just like you do not learn how to drive a car by reading books about it. You don't learn much by looking at someone else playing the game.
